1/2 cup quinoa
1 large cucumber, diced
1 diced red pepper
1 carrot, coarsely grated

Instructions:
Quinoa Preparation:
Rinse the quinoa under cold water. Then cook the quinoa in double the amount of water until tender (according to the instructions on the package). This usually takes about 15 minutes. Leave the quinoa to cool.
Vegetable Preparation:
In a large bowl, mix together the sliced cucumber, red pepper, grated carrots, finely chopped red onion, and fresh herbs.
Preparing the dressing:
